Kartoffel Pfannkuchen (German Potato Pancakes) 3 C grated raw potatoes 2 eggs, well beaten 1½ Tbl. flour
1/8 tsp. baking powder 1 tsp. salt Peel large potatoes and cover with cold water. Let soak for several hours. Pour off water and grate. Drain thoroughly.
Add eggs to potatoes and mix. Lightly stir in remaining ingredients. Drop from spoon into hot, wellgreased skillet and brown on both sides. Makes 12 three-inch cakes. Serve with applesauce Delores Pfanstiel Osmond Centennial Cookbook, Pg. 36
